Question 1

Can I use a boneless leg instead of bone-in?

Accepted Answer

Yes—boneless legs can be used, but the bone adds flavor and helps the roast stay juicier during the long roast. Cooking time may vary slightly; check tenderness after 3 hours and continue until the meat pulls easily from where the bone would be.

Question 2

How do I tell when the roast is done?

Accepted Answer

This recipe uses tenderness as the doneness indicator: after 3 hours at 325 degrees F, test with tongs—if the meat easily pulls from the bone, it’s ready. Continue roasting if it still feels firm.

Question 3

What’s the best way to reheat leftovers?

Accepted Answer

Follow the reheating guidance in the prep-ahead section: microwave in short intervals, or reheat in the oven at 350ºF wrapped with a splash of broth for 8-10 minutes. For stovetop reheating, add a splash of broth to a skillet, cover, and warm on low while stirring occasionally.
