Question 1

Can I freeze this stew?

Accepted Answer

Yes. Cool completely, transfer to airtight containers or freezer bags, and freeze for up to 3 months. Thaw overnight in the fridge and reheat gently on the stovetop; you may need to add a splash of water or broth to loosen the thickened broth.

Question 2

Can I use different greens or beans?

Accepted Answer

Yes—Swiss chard, spinach, or collards can substitute for kale (adjust cooking time: spinach wilts quickly). Other white beans, like great northern or navy beans, work in place of cannellini.

Question 3

Can this be finished with cheese?

Accepted Answer

You can grate Parmesan or another hard cheese over individual bowls for extra richness, but note that doing so will make the dish non-vegan.
