Question 1

Can I make this soup vegetarian?

Accepted Answer

Yes — substitute vegetable broth for the reduced-sodium chicken broth called for in the recipe and follow the same method; the slow cooking and caramelized onions still build excellent flavor.

Question 2

How should I reheat and freeze leftovers?

Accepted Answer

Rewarm gently on the stovetop over medium-low or in the microwave. Refrigerate in an airtight container for up to 1 week. Freeze in a freezer-safe container for up to 3 months and thaw overnight in the refrigerator before reheating.

Question 3

Can I skip blending and leave the soup chunky?

Accepted Answer

Yes — if you prefer a chunkier texture, you can skip puréeing. The soups flavor will be the same, but the texture will be more rustic and tomato-forward.
