Ingredients

  • 2 zucchini medium, peeled and chopped
  • 1/2 cup tahini
  • 1/3 cup lemon juice
  • 1/3 cup olive oil
  • 3 cloves garlic
  • 1 1/2 teaspoons cumin
  • sea salt & pepper to taste

Instructions

  1. Place 2 zucchini, peeled and chopped, 1/2 cup tahini, 1/3 cup lemon juice, 1/3 cup olive oil, 3 garlic cloves, 1 1/2 teaspoons cumin, and sea salt & pepper to taste in the base of a food processor.
  2. Process until smooth, then transfer to a serving bowl and serve with crisp raw veggies such as carrots, celery sticks, broccoli, cherry tomatoes, or cucumber slices for dipping.

Notes

Adjust sea salt and pepper to taste after processing. This dip can be made ahead and refrigerated; stir or bring to room temperature before serving. Serve with the suggested crisp raw veggies or use as a spread for sandwiches and crackers.
