Combine 2 cups self raising flour, 2 tablespoons sugar, 2 teaspoons baking powder and a pinch of salt in a mixing bowl and whisk to combine. Make a well in the centre, add 1 egg, 1 teaspoon pure vanilla extract and 1 3/4 cups skim milk (or unsweetened almond milk), and whisk the wet ingredients before incorporating them into the dry ingredients. Add 2 tablespoons melted reduced fat butter and whisk until the batter is smooth and creamy.
Pour half of the batter into a separate jug or bowl and stir in 2 tablespoons unsweetened cocoa powder, whisking until dissolved; add the extra 2 tablespoons milk if the chocolate batter is too thick.
Preheat a nonstick pan and lightly grease with cooking spray, butter or oil. Pour about two tablespoons of the plain batter into the centre of the pan, then immediately spoon about two tablespoons of the chocolate batter over the top; continue alternating spoonfuls until you have 5–6 concentric rings.
Cook the pancake until bubbles form on the top, then flip and cook until cooked through. Repeat with remaining batter, greasing the pan between every second or third pancake depending on pan quality.
Serve with maple syrup, ice cream, fruit, berries, melted chocolate or other toppings as desired.
