Equipment

  • Large bowl
  • stainless steel wire rack
  • rimmed baking sheet
  • oven
  • instant-read thermometer

Ingredients

  • cup plain coconut yogurt or use ½ cup full fat coconut milk + 2 tablespoons lemon juice
  • 2½ teaspoons Magic Mushroom Powder
  • 1 teaspoon Red Boat fish sauce
  • 6 cloves garlic minced
  • 3 pounds chicken thighs bone-in, skin-on

Instructions

  1. In a large bowl, combine the plain coconut yogurt (or ½ cup full fat coconut milk + 2 tablespoons lemon juice), Magic Mushroom Powder, Red Boat fish sauce, and minced garlic; mix until smooth.
  2. Add the chicken thighs and toss until they are well coated in the marinade, then cover and refrigerate to marinate for at least 30 minutes or up to 1 day.
  3. When ready to cook, heat the oven to 400°F for convection or 425°F for conventional bake and position the rack in the middle; shake off excess marinade from the thighs and arrange them skin-side down on a stainless steel wire rack set in a rimmed baking sheet.
  4. Roast the chicken for 45 minutes, rotating the tray and flipping the thighs skin-side up at the halfway point.
  5. The thighs are done when the skin is nicely browned and the internal temperature in the thickest part reaches at least 165°F.

Notes

Note about the plain coconut yogurt: Some of the brands I like includeAnita’s Coconut Yogurt,Living Cultures Super Food, andCoyo. No coconut yogurt? No prob! Just use full fat coconut milk + lemon juice!
If you use boneless, skinless chicken thighs, decrease the total cooking time to 30 minutes or cook until the final internal cooking temperature is 165°F.
If you're using chicken breasts, make sure you don't over cook them! Cook until the final cooking temperature is 150°F and not too much higher!
