Equipment

  • baking sheet
  • parchment paper
  • Pizza Cutter
  • pastry brush

Ingredients

  • 1 sheet puff pastry thawed if frozen
  • 1 to 2 teaspoons chipotle chili powder or smoked paprika
  • 6 ounces sharp cheddar cheese freshly grated
  • 1 large egg plus 1 teaspoon water, lightly beaten for egg wash

Instructions

  1. Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Place the thawed puff pastry sheet on the prepared parchment. Evenly sprinkle the pastry with 1 to 2 teaspoons chipotle chili powder or smoked paprika, then cover with 6 ounces freshly grated sharp cheddar. Lightly press the cheese into the pastry so it adheres.
  3. Using a pizza cutter, slice the pastry into 1-inch strips (cut from top to bottom with the sheet horizontal). Take each strip and gently twist it from the edges and center about four or five times; cheese that falls onto the parchment will crisp up while baking.
  4. Brush each pastry twist with the egg wash (1 large egg + 1 teaspoon water, lightly beaten). Bake for 20 to 25 minutes, until the twists are puffed and golden brown, then remove from the oven.

Notes

Swap chipotle chili powder for smoked paprika to reduce heat and increase smoky flavor. Any stray cheese that melts onto the parchment will become crispy and adds extra texture. These can be made ahead and warmed briefly before serving to refresh the crispness.
