Philly Cheesesteak Sandwiches

These Philly cheesesteak sandwiches are melty and savory, built with ultra-thin rib-eye, softened white onions, and melted Havarti on split hoagie rolls. The quick stovetop-to-oven method finishes the sandwiches in about 20–30 minutes, making them ideal for an easy lunch.

Ingredients

  • 2 hoagie rolls split
  • 2 tablespoons butter
  • 1/2 large white onion cut in half and thinly sliced
  • 1 rib-eye or flat iron steak about 3/4 pounds, sliced thinly across the grain and then roughly chopped
  • salt and pepper to taste
  • butter for cooking
  • 4 slices Havarti cheese Provolone or Muenster would work as well
  • steak-slicing tip It sometimes helps to freeze the steak for 15-20 minutes before slicing; the slightly frozen meat will be easier to slice super-thin.

Instructions

  1. Preheat oven to 250 degrees F.
  2. Heat a non-stick skillet with 1 tablespoon butter over medium-high heat. Add the thinly sliced onion and cook for 5 to 8 minutes, stirring occasionally, until the onions are softened and translucent.
  3. Season the steak pieces with salt and pepper. Add the steak to the skillet and cook for 2 to 4 minutes, until just a little pink remains. Push the meat mixture to the sides of the skillet to form two piles.
  4. Place 2 slices of Havarti cheese on top of each pile, cover the skillet, and let the cheese melt for 1 to 2 minutes.
  5. Carefully transfer each half of the meat and melted cheese into the split hoagie rolls. Wrap each sandwich tightly in aluminum foil, place on a baking sheet, and bake for 10 to 15 minutes, until warmed through.

Notes

For easier ultra-thin slicing, freeze the steak for 15-20 minutes before slicing. Havarti is used here, but Provolone or Muenster are fine substitutes. Be sure to slice the steak thinly across the grain and then roughly chop as directed for the best texture.
