Instructions
Preheat the oven to 350°F.
In a large bowl using a hand mixer, cream ¾ cup unsalted butter, ½ cup brown sugar, and ¼ cup granulated sugar until light and fluffy.
Beat in 1 large egg and 1 teaspoon pure vanilla extract until incorporated.
In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon kosher salt.
Add the flour mixture to the wet ingredients little by little, beating lightly after each addition until a dough forms.
Use a cookie scoop to drop balls of dough about 2 tablespoons in size onto a large baking sheet, then roll each scoop into a smooth ball.
Use the back of a measuring spoon to make an indent in the center of each dough ball.
In a saucepan, melt 6 tablespoons unsalted butter, then stir in ¾ cup brown sugar and 1½ cups chopped pecans until the sugar is incorporated.
Stir in ⅓ cup heavy cream, ½ teaspoon pure vanilla extract, ½ teaspoon ground cinnamon, ⅛ teaspoon ground nutmeg, and ⅛ teaspoon kosher salt until the filling is combined.
Spoon the pecan filling into the indent of each cookie, taking care not to overfill.
Bake the filled cookies for 9-10 minutes.
Let the cookies cool for a few minutes on the baking sheet, then transfer to a cooling rack to cool completely.

Let the pecan filling cool slightly to thicken before spooning into the indents to help prevent leaking or soggy bottoms. Dough and filling can be made ahead and refrigerated until ready to assemble; store baked cookies in an airtight container.
