Peanut Butter Rice Krispie Brownies

These brownies layer gooey marshmallows with a crunchy peanut butter–chocolate Rice Krispie topping over fudgy boxed brownies for a contrast of gooey and crisp textures. They take about 10 minutes prep plus bake time and should be chilled for at least 2 hours so the topping sets, making them great for parties or make-ahead desserts.

Ingredients

  • 1 18 ounce brownie mix
  • 4 cups miniature marshmallows
  • 1-1/3 cups semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 3 tablespoons unsalted butter
  • 2 cups crispy rice cereal

Instructions

  1. Preheat oven to the temperature directed on the brownie package.
  2. Line a 9×13 pan with parchment paper.
  3. Prepare the brownies according to the box directions.
  4. About 4 minutes before the brownies are fully cooked, remove the pan from the oven and evenly top the brownies with the miniature marshmallows.
  5. Return the pan to the oven and bake 4 more minutes to soften the marshmallows.
  6. Remove from the oven and spread the softened marshmallows into an even layer; let the brownies cool completely.
  7. In a microwave-safe bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and unsalted butter.
  8. Microwave on high for 30 seconds, stir, and repeat heating and stirring until the chocolate is melted and the mixture is smooth.
  9. Add the crispy rice cereal and stir to combine.
  10. Drop spoonfuls of the chocolate and peanut butter rice crisp mixture over the marshmallow layer and spread as evenly as possible.
  11. Refrigerate the brownies for at least 2 hours to chill and let the topping set.
  12. Lift the brownies from the pan using the parchment paper and cut into squares.

Notes

Do not cut the brownies before the topping has set up. They will not hold together properly, resulting in a sticky mess.
Use whatever brownie mix is your favorite.
Brownie mixes can vary in size, but you want something around 18 ounces. Anything from 17-20 ounces will work.
Lining the pan with parchment paper will help you life the brownies out of the pan and make it easier to cut and not stick.
