Ingredients

  • 8 ounces kale sprouts
  • 6-86 garlic cloves garlic whole, peeled and halved
  • 2 tablespoons olive oil
  • sea salt and freshly ground black pepper
  • 2 tablespoons parmesan cheese fresh grated

Instructions

  1. Preheat the oven to 400F.
  2. Trim the kale sprouts and cut them in half lengthwise; cut larger sprouts into thirds or quarters so they cook evenly.
  3. Place the kale sprouts and the peeled, halved garlic cloves on a baking sheet. Drizzle with olive oil and toss to coat, spreading everything in a single layer.
  4. Roast for 12 minutes, toss everything on the baking sheet, then return to the oven and roast for another 10-12 minutes until the sprouts are tender and browned at the edges.
  5. Season with sea salt and freshly ground black pepper, then toss with fresh grated Parmesan cheese.

Notes

Use a rimmed baking sheet and spread the sprouts in a single layer so they roast instead of steam; crowding will prevent browning. Cut larger sprouts as directed to ensure even cooking. Add the Parmesan after roasting so it melts slightly without burning.
