Fruity Pebble Treats

These Fruity Pebble treats are colorful, chewy no-bake cereal bars made with Fruity Pebbles, melted marshmallows, and butter, finished with an optional white chocolate drizzle. They set firm in about 2 hours, making them great for parties, lunchboxes, or a nostalgic snack.

Equipment

Ingredients

  • 5 cups Fruity Pebbles cereal
  • 1 cup mini marshmallows
  • 4 tablespoons unsalted butter
  • 10 ounce bag large or mini marshmallows
  • 1/2 cup white chocolate chips optional

Instructions

  1. Line an 8×8-inch square baking pan with parchment paper or aluminum foil and grease it generously with cooking spray or butter.
  2. Stir together the 5 cups Fruity Pebbles cereal and 1 cup mini marshmallows in a large bowl; set aside.
  3. In a large, heavy-bottomed pot, melt 4 tablespoons unsalted butter over low heat. Add the 10 ounce bag of large or mini marshmallows and stir constantly until melted, then remove from heat.
  4. Pour the cereal and mini marshmallow mixture into the pot with the melted marshmallows and butter, and stir until well combined.
  5. Transfer the mixture to the prepared baking dish and press down tightly until the top is level. Let set at room temperature or refrigerate for 1 1/2 hours.
  6. If using white chocolate chips, melt 1/2 cup white chocolate chips in the microwave at 50% power in 15–30 second intervals, stirring between intervals, then drizzle over the bars with a spoon.
  7. Allow the drizzle to firm for about 20 minutes, or until the white chocolate has set, before cutting into bars.

Notes

Use an 8×8-inch pan to yield about 9 bars and press the mixture firmly into the pan for dense, chewy bars. Refrigerating speeds setting and produces firmer bars for cleaner slices. The white chocolate drizzle is optional—melt at 50% power in short bursts and stir between intervals to avoid scorching.
