Deep Dish Monster Cookies

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 cup old fashion rolled oatmeal
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar lightly packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&Ms
  • 1/3 cup sweetened shredded coconut
  • 1/4 cup toffee bits

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, whisk together 3/4 cup all-purpose flour, 1/2 cup old fashion rolled oatmeal, 1/2 teaspoon baking soda, and 1/4 teaspoon salt; set aside.
  3. Place 1/2 cup unsalted butter in a medium saucepan over medium heat and cook, stirring, until melted. Turn off the heat and stir in 3/4 cup brown sugar and 1/2 cup granulated sugar. Add 1 large egg and 1 teaspoon vanilla extract and whisk to combine.
  4. Slowly add the reserved dry ingredients to the butter-sugar mixture, whisking until combined and no flour streaks remain, then fold in 1/2 cup mini chocolate chips, 1/2 cup mini M&Ms, 1/3 cup sweetened shredded coconut, and 1/4 cup toffee bits.
  5. Scrape and divide batter into four shallow 6-inch ramekins. Bake at 375 degrees until cookies are browned on top and the center is just set. Remove from oven and transfer ramekins to a wire rack to cool.

Use four shallow 6-inch ramekins and avoid overfilling so the centers set without overflowing. Baking time varies by oven and ramekin material—look for a browned top and a center that is just set for a chewy interior.
