Carrot Cheese Ball

This carrot-shaped cheese ball is creamy and tangy with a crunchy grated-cheddar coating and a fresh broccoli "green" on top, made from cream cheese, grated carrots, and sharp cheddar. It chills quickly and is ready in about 45 minutes, making it ideal for parties and appetizer platters served with crackers and veggie sticks.

Ingredients

  • 16 ounces cream cheese softened
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon onion powder
  • 1 teaspoon worcestershire sauce
  • 1 cup carrots finely grated
  • 1 1/2 cups cheddar cheese finely grated
  • 1 cup broccoli florets trimmed into bite size pieces

Instructions

  1. In a large mixing bowl, combine 16 ounces cream cheese (softened), 1/2 teaspoon garlic salt, 1/4 teaspoon onion powder, and 1 teaspoon Worcestershire sauce. Beat with an electric hand mixer until smooth, then fold in 1 cup finely grated carrots and 1/2 cup finely grated cheddar cheese.
  2. Lay out a sheet of plastic wrap on the counter and spray the wrap with cooking spray. Place the cheese mixture in the center, gather the edges of the plastic wrap, and shape the mixture into a triangle. Refrigerate for 30 minutes to firm.
  3. Remove the chilled triangle from the plastic wrap and gently transfer it to the center of a serving platter. Reshape with your hands if needed, then cover the triangle with the remaining 1 cup finely grated cheddar cheese and pat down so the cheese adheres.
  4. Trim 1 cup broccoli florets into small, bite-size pieces. Arrange the broccoli at the top of the cheese triangle to resemble the greens of a carrot.
  5. Serve with crackers and veggie sticks.

Notes

Spraying the plastic wrap prevents the cheese from sticking and makes shaping easier. Chill the shaped triangle for at least 30 minutes so it firms up before coating with cheddar. Trim the broccoli small so it sits neatly as the carrot "greens."
