7 Layer Dip

This seven-layer dip is creamy, tangy, and chunky with layers of refried beans, seasoned sour cream, zesty guacamole, salsa, crisp romaine, shredded Mexican cheese, olives, and green onions. It assembles quickly and chills in about 20 minutes, making it ideal for parties and make-ahead appetizers.

Ingredients

  • 16 oz refried beans store-bought or homemade (1 can)
  • 4 oz green chiles diced (1 small can)
  • 1 cup sour cream
  • 2 tbsp taco seasoning store-bought or homemade
  • 2 avocados
  • 2 tbsp cilantro chopped fresh
  • 1/2 jalapeño pepper diced (optional)
  • 1/2 lime juiced
  • 1/2 tsp kosher salt
  • 1 cup salsa or sauce store-bought, homemade, diced tomatoes or pico de gallo
  • 1 cup romaine lettuce shredded
  • 1 cup Mexican cheese shredded
  • 4 oz black olives sliced, drained (1 small can), green or kalamata also work
  • 2 green onions sliced, or use chives
  • tortilla chips optional, for serving

Instructions

  1. In a large bowl, mix the 16 oz. refried beans and 4 oz. diced green chiles until combined. Spread the mixture evenly in the bottom of a 9×9-inch baking dish.
  2. In a medium bowl, stir together 1 cup sour cream and 2 tbsp taco seasoning until smooth. Spread the seasoned sour cream evenly over the bean layer.
  3. In a large bowl, mash 2 avocados. Stir in 2 tbsp chopped fresh cilantro, ½ jalapeño (diced, optional), ½ lime juice, and ½ tsp kosher salt until combined. Spread the guacamole mixture over the sour cream layer.
  4. Spread 1 cup salsa over the guacamole, then top evenly with 1 cup shredded romaine lettuce, 1 cup shredded Mexican cheese, 4 oz. sliced black olives (drained), and 2 sliced green onions. Cover and chill until ready to serve; serve with tortilla chips if desired.

Notes

Assemble the dip up to a day ahead and keep chilled. To minimize avocado browning, press plastic wrap directly onto the avocado layer or mix the lime juice in just before spreading. You can swap green or kalamata olives for the black olives and use store-bought or homemade refried beans and salsa.
