Question 1

Can I use a different bean?

Accepted Answer

Yes—black beans or cannellini beans both work. They change the flavor and color slightly (black beans make a darker dip), so taste and adjust salt, lime, and cumin after blending.

Question 2

How spicy is this dip and how can I control it?

Accepted Answer

Spice level depends on how much of the jalapeño pith and seeds you include. Remove the white pith and seeds for mild heat, or add jarred jalapeño slices to increase heat in a controlled way.

Question 3

Can I make this ahead for a party?

Accepted Answer

Yes—make the dip up to 2 days ahead (it will keep up to 5 days in the fridge). Chill it in an airtight container; stir and thin slightly with water before serving if it has become thick.
